I’m really enjoying being off work at the moment and getting a chance to spend time preparing and cooking dinner each night. Last night I made pizza and it turned out really well. It’s quite hard cooking with a 30 year old electric oven that isn’t fan forced but i’m slowly getting used to the tricks and constant rotation.
I made the dough from scratch as it is so easy and then made 2 different toppings. The first was a tomato base topped with prosciutto, bocconcini, basil and some mozzarella on top and stuffed into the crust.
This was the before and below the cooked result topped with some fresh rocket.
The other pizza had a barbecue bourbon base topped with pulled pork, prawns and mushrooms and was a favourite of Clint’s.
I can’t wait to get over to Tasmania and get my hands on some of the fresh produce they have on offer and hopefully trial some new ingredients as I really do enjoy cooking and eating.
